Ideal for those warm summer days when you want some extra hydration and fresh ingredients filled with vitamins and minerals!
I used to really hate mixing fruits with my vegetables, but this season, I can't seem to get enough of it!
I have been going to a local farmer's market every Saturday with my boyfriend in Berlin, and I think all these juicy fruits and vegetables have been sparking creativity within me!
I have been mixing and matching and trying out combinations that I normally wouldn't make! I really enjoy this "trial and error" method of creating a meal. Although I may not always be happy with the end product, I know what to change, what I did right, and what my body is wanting.
I have been reading a lot about intuitive eating lately, which is something that I try to practice. Asking myself important questions when I want to make a meal:
What does my body need today? What nutrients do I need more of? Does savory, sweet, bitter, or sour food sound good to me today? What am I craving?
Usually when you crave something, it is your body's way of telling you what you are missing. And for me, that has been strawberries and cucumbers lately.
Strawberries and cucumbers are full in fiber and water, which counteract bloating. They both are antioxidants, contain necessary daily vitamins, and regulates weight.
I figured, why not try them together???
Ingredients: Serves 2
- 10 Strawberries
- 1 Large Cucumber or 3 Persian Cucumbers
- 1 Red Onion
- 1 Tomato or 6 Cherry Tomatoes
- 2 Radishes
- Vegan Feta Cheez (optional)
- Handful of Walnuts (about 20g)
- Handful of Fresh Mint (about 20g)
- 1 Lime
- Balsamic Glaze
- Olive Oil
- Salt and Pepper to taste
Directions:
Wash ingredients.
Peel the cucumber.
Dice the cucumber, red onion, tomatoes, radishes, and fresh mint. Place into a mixing bowl.
Cut the strawberries and walnuts into quarters. Add into the mixing bowl.
Juice the lime.
Add lime juice, olive oil, and balsamic glaze drizzle into the mixing bowl.
Crumble the Vegan Feta Cheez into the bowl. (Dicing the Feta works too, but the crumble gives a better texture). Throw in some salt and pepper as preferred.
Serve immediately.
Super simple, filled vitamins, and a refreshing feeling after consuming it!
