Golden Cauliflower & Hummus Wrap


The roasted cauliflower by itself will tickle your tastebuds!

This combination has been one of my weekly must-haves for over a year now!! It is the perfect lunch on days after some morning yoga or movement… when I want something fibrous & filling but not very carb-heavy!


Inspired by Israeli food from @miznonvienna & @hungryguywien - some of my favorite lunch spots in Vienna that specialize is such delicious pitas and their vegetable game is on point!!!


When creating this at home, I usually pop the cauliflower in the oven and do a lil workout while I wait for it to bake to perfection! Then I pair with sparkling water & freshly-squeezed Lemon juice for extra hydration & a Vitamin C boost!



Health Benefits from Golden Cauliflower & Hummus Wrap


Cauliflower: full of fiber and nutrient dense, including Phosphorous, Manganese, Magnesium, Potassium, B Vitamins, Vitamin C, and Vitamin K. Contains Anti-inflammatory and Anti-oxidizing properties and supports heart health


Hummus: high in protein and fiber. Mineral rich with Calcium, Copper, Iron, Folate, and Manganese. Decreases bad cholesterol (LDLs), regulates blood sugar, and full of healthy fats (monounsaturated), and has Anti-oxidizing properties







Ingredients: serves 2-3

- 1 Cauliflower head

- 1 Cucumber

- 1 Carrot

- Pack of Tortillas or Pita

- Hummus

- Sprouts

- Lettuce

- Rapeseed Oil (or other Vegetable-based Oil)

- Salt and Pepper






Method:

  1. Coat a baking pan with large chunks of garlic and a drizzle of a vegetable-based oil

  2. Wash the cauliflower and cut into florets. Place cauliflower florets onto the baking pan

  3. Add salt and pepper to taste, then drizzle more oil on top of cauliflower florets

  4. Bake the cauliflower in the oven for 50-60 minutes on 180*C (or 355*F)

  5. Place a tortilla or pita on a plate

  6. Add a generous amount of your favorite hummus, mine is cilantro hummus!

  7. Cut one cucumber and shred one carrot then add onto the tortilla or pita

  8. Throw the roasted cauliflower from the oven on the tortilla or pita

  9. Place fresh sprouts and lettuce on top of the roasted cauliflower

  10. Voilá, your pita is done and ready to be consumed!!


Days at my hometown in California, I tend to make this a lot for me and my mom! She loves the roasted cauliflower but actually prefers topping a mixed greens salad with the cauli & veggies that I use to make my wrap. This is a perfect for those of you avoiding extra carbs from the tortilla or pita!
