Chewy Chickpea Chocolate Chip Cookies

Gluten-free, soy-free, and guilt-free, these soft and chewy cookies will initiate a lil new plant-based Cookie Monster!


I have to say, as someone who is more inclined to enjoy crispy and thin cookies, I wanted to embark on a journey to try something new. The way that this cookie is made will make you think of the classic Chips Ahoy! store-bought cookies; hard on the outside, but soft and chewy on the inside!


Making this cookie with Chickpea flour is not only a game-changer taste-bud-wise, but it is also filled with healthy nutrients for the body!


Chickpea Flour is packed with protein, fiber, and contain anti-oxidizing properties to fight free radicals. Contains a lot of vitamins and minerals; Thiamine (B1), Folate (B9), Copper, Iron, Magnesium, Manganese, and Phosphorous. It also has around 25% less calories than normal all-purpose flour, which is perfect for those of you who count calories and monitor your dietary intake.




Ingredients: for about 6 cookies

- 250g Chickpea Flour

- 1 bar of Dark Chocolate (I used 70%)

- 1/4 cup of Cashew Butter

- 1/4 cup of Sugar

- 1 tbsp of Salt

- 1 tbsp of Vanilla Sugar

- 1 tbsp of Baking Powder

- 2 tbsp of Maple Syrup

- 2 tbsp of Vegetable-based oil (Rapeseed)

- 3 tbsp of Flaxseeds





Method:

  1. Create a "Flax egg" by pouring 3 tbsp of flaxseeds into a small bowl with 1/4 cup of water. Mix thoroughly then let sit for at least 10 minutes. We will be returning back to this step

  2. Add all dry ingredients into a large mixing bowl then mix: chickpea flour, sugar, salt, baking powder, and vanilla sugar.

  3. Once the Flax egg has sat for 10 minutes, add the wet ingredients into the small bowl: cashew butter, maple syrup, and rapeseed oil.

  4. Add the wet ingredients from the small bowl into the large mixing bowl with the dry ingredients. Mix concoction well, do not leave any flour lumps or bumps!!

  5. Cut up a chocolate bar and add into the mixture. **Pro tip: perfect morsels are not necessary. I love having some bigger "chocolate chips" and some gooey chocolate inside of my cookies!!

  6. Set the oven to 180*C or 355*F

  7. Scoop out about a spoonful of cookie dough and form into balls on a lined baking sheet. (I also like chunky and imperfect cookies, so sometimes I omit turning the cookies into balls).

  8. Bake cookies for 12-15 minutes, or until golden brown.

  9. Let cool for 5 minutes and then enjoy with a glass of your favorite plant-based milk!




My hopes are that people will enjoy these cookies as a sweet treat at the end of the day. Life is allllll about balance and being able to take breaks from strict self-limitations and reward yourself, no matter how small or big the accomplishment!


Be proud of yourself, reflect on how far you have come in life, and indulge in some cookies, even if they aren't sugar-free!
