Looking for a spot with scrumptious vegan food, revitalizing elixirs, a place to do work or read, meet like-minded individuals, or attend mind-expanding events? This conscious cafe has it all.
Eve is placed in a popping location in Encinitas, California- creating a safe haven for a wide-range of individuals. With a large backroom, the ambiance unveiled itself as rustic, Persian-infused, cozy, open, and spacious (yet, you could even be as private as you desire- there's Asian foldable walls to have alone time or dive deep into work upon request). My first experience at Eve was too delicious, I ate their twice in one weekend!
Not only does the cafe look and feel like home, the employees even treat you like family. During my experience, I was greeted so warmly by the owner, Scott, and the rest of the staff were so friendly and welcoming throughout our time there. My friends and I even received a variety of refreshing Cava samples to kick-off their Cava happy hour mid-meal.
I have to say, the menu is pretty overwhelming for me. There were so many options for me to choose from, I had a difficult time! There is yummy smoothies and kombucha, breakfasts, flat-bread pizzas, a plethora bowls to choose from, salads, sweets, and more! As a lover of a variety of food, I love having the option to eat breakfast foods at any hour I please. Eve serves breakfast ALL DAY! Due to this rarity, I found myself ordering vegan, gluten-free pancakes in the middle of the day during my second visit.
Thankfully, I was with some friends each visit, so I was fortunate to try a few things on Eve's menu. During my first visit, my friend and I split the Sunchoke Asparagus and Butternut Squash Flatbread and the Garden of Eden smoothie. What a perfect combination those were and to split half and half was the perfect amount of food for me!
Because I currently reside in the Italian region of Switzerland for majority of the year, I find myself around SO MANY pizzas and pastas. Being vegan and currently aspiring to be gluten-free, I love the opportunity to get a pizza that I can actually swallow! Adding the asparagus and butternut squash made the pizza so creamy and crunchy at the same time, I was in heaven! We even had a side of Avo Crema sauce to dip the pizza in, it was such a delicious combination--my mouth is watering as I reflect on it!
The Garden of Eden Smoothie was blended with Apple juice, dates, cacao, maca, cava, banana, and almond milk. It was such a heart-opening drink, just what I was looking for in that moment of time. The smoothie was thick, but blended enough to drink from the straw easily and I love the combination of cacao, dates, and bananas- I have such a sweet tooth!
After loving my first experience and wanting to try more on the menu, I went to Eve a second time. A few girl friends of mine and I went around lunch time and ordered a bunch of items to share and pick off each other's plates! (Family-style is my favorite way of eating). We went with the La Granja! Breakfast Burrito, The Pancake Experience, The Winter Harvest Salad, and the World Nativ Smoothie. Wow. Just wow. We devoured every last bite.
The La Granja! Breakfast Burrito contains scrambled chickpeas with peppers, spices, and cactus combined with Avo Crema sauce, black beans, potatoes, Cole slaw, and more! It was divine- I am such a lover of spicy foods and seeing the different pairings that chickpeas can go with! Chickpeas are not only a versatile ingredients, they are also a great source of protein, fiber, Manganese, Magnesium, Zinc, and vitamin K!
The Pancakes were so fluffy and delicious which is can be hard to achieve when eggs and milk are not included in the ingredients! It seemed like bananas, chia seeds, and oats were part of the mix, topped with strawberries, hemp seeds, coconut, and organic maple syrup- I was beyond satisfied.
The Winter Harvest Salad was the perfect pallet cleanser for our other sweet and spicy items. The Light Terragon Sunflower Dressing was so refreshing mixed with the kale, butternut squash, watermelon radishes, lentils, asparagus, and avocado!
Lastly, The World Nativ Smoothie was exactly the revitalizing drink I was looking for. The mix included banana, mango, spinach, matcha, chlorophyll, blue green algae, sea salt, vanilla, coconut milk, and coconut water. Packed with vitamins, nutrients, and superfoods, The World Nativ smoothie tastes so tropical and refreshing while containing strong antioxidants, anti-cancer fighting effects, anti-flammatory benefits, promote a healthy heart, and have weight loss effects.
"Eve" in Hebrew is "Ḥawwāh" and is most commonly believed to mean "living one" or "source of life". This cafe really serves as a source of life to many who wish to perceive it that way- through actually sourcing their bodies with food or nourishing their minds with their Public Use books or special events going on. I highly recommend this spot, it has quickly become a new favorite of mine and their food is beyond my expectations!
